Ingredients: 1 kg fres kidney beans, 1 small cup olive oil , 1 carrot, 1 onion, 2 tablespoons tomato pasta, 3 cloves garlic, 1/2 bunch parsley, salt to taste, 1 tablespoon red pepper, 1 tablespoon dried mint.
Boil the shelled and washed beans for 10 minutes. Drain. Saute chopped onion in olive oil until light brown. Add garlic, sliced carrot, and tomato pasta, cook for 10 minutes. Then add beans, salt, and 4 cups hot water and cook until beans are tender. Serve cold and garnish with chopped parsley.
