1 medium cauliflower, 4 cups water, 1 lemon juice, 1/2 cups flour, 1 cup kasar or gruyere cheese, 3 eggs, 1 cup olive oil, 2 cups yogurt, 2 cloves garlic, salt, black pepper, 2 tablespoons tomato pasta.
Soak cauliflower, head down, in salted cold water about 15 minutes, rinse and drain. Bring 4 cups of water, salt and lemon juice to boil in a saucepan. Add the cauliflower. Boil until tender but not too soft , about 10 minutes. Remove cauliflower and separate flowerets. Beat egg yolks, add grated cheese, tomato pasta, salt and pepper and mix well. Coat cauliflower with flour on both sides, then deep into egg mixture. Fry in hot olive oil on one side until golden brown then fry the other side. Serve with hot with yogurt or yogurt and garlic sauce.
